In New York State and my brother and I loved those Thruway rest areas! (Of course much to the consternation of our parents). I sure hope Jersey shore arcades and Weirs Beach (near where we live) don’t go that upscale route. I can really truly understand your feelings!!
The old Jersey Shore boardwalks had some very different things. I am old enough to remember Atlantic City and the diving horse. Sea Isle had this horrible thing that if you hit the target a chicken would get out and slide down the chute. They lived, but it was unnerving. At least that was taken away. I spent most of my time on LBI, no boardwalk.
Canobie Lake Park still has a Zoltar. It's actually a bit creepy, because even when the park is closed (during spring, summer, and fall, anyway), the machine is still on and randomly talks. When I walked by on my breaks, it started talking, which I found unnerving.

I miss the old shooting gallery at Hampton Beach, but they still have a few fortune tellers left. Out west the truck stops are great.
Gasp!! 😱
